EAT CLEAN Chocolate sour cream cupcakes
These are from the Clean Eating Magazine which promotes fresh foods. Yes its a cupcake so you cant eat a whole bunch and still expect to lose weight BUT they are made with more natural ingredients.
Ingredients:
1 Cup unsweetened natural cocoa powder
1 1/4 cup sucanat (Cane sugar)
1/4 cup whole wheat pastry flour
1/4 tsp kosher salt
1/4 tsp baking soda
1 cup organic low-fat sour cream
1/3 cup plus 2 tsp skim milk
1 tbsp olive oil
1/2 tsp pure vanilla extract
1 whole egg plus 2 egg whites
1 oz bittersweet chocolate, chopped plus more for a garnish if desired
Preheat oven to 350 degrees F. Line 12 cup muffin pan with paper cupcake liners. In a large mixing bowl, combine cocoa powder, 1 cup of sucanat, flour, salt and baking soda.
In a medium mixing bowl, whisk together sour cream, 1/3 cup milk, oil, vanilla and whole egg. Make a well in the center of the dry ingredients and pour in wet ingredients. Combine everything with rubber spatula.
Add egg whites to a large clean, dry mixing bowl and whip whites with hand beater until they get foamy. Add remaining sucanat and whip eggs and sucanat till they are medium-stiff peaks.
Fold whites into thirds into cake batter, gently and assertively with rubber spatula. Fill cupcake liners with batter about 3/4 full and bake for 45 minutes or until toothpick comes out clean.
Let cool completely,
When cupcakes are completely cool, combine the remaining 2 tsp milk and chocolate and melt in microwave until smooth. Spread a thin layer on top of cupcakes and let cool and then sprinkle shredded chocolate if desired! Yum Yum this makes me want another one. :)
